Now that summer is here, it also means time for our favorite summer bbq food – potato salad. I love yummy potato salad all summer with steak, hot dogs or hamburgers! Who doesn’t love a good potato salad?! Well, my husband. He must be the only person I know who doesn’t like it. That just means more for us to eat!
There are hundreds of potato recipes out there and lots of variations on this great salad. Skin-on the potato, potato chunks, mashed potato, green, purple or white onions, no mayo, eggs, bacon, tangy sauces, hot or cold potato salads. The list goes on and on.
Here’s our family (except my husband) favorite potato recipe.
Bacon & Egg Potato Salad
- 2 1/2 pounds red potatoes – cut into bite size pieces
- 5 hard boiled eggs – chopped
- 5 slices cooked bacon – chopped
- 1/4 cup onions – minced
- 1 cup mayonnaise
- 2 tablespoons cream
- 2 tablespoons dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
Cook potatoes, drain and set in fridge to cool – about 15 minutes.
Add the eggs, bacon and onions to the potatoes. Mix well.
To the mayonnaise add the cream, mustard, salt, pepper & paprika. Mix well.
Pour over potatoes and mix to coat potatoes with mayo mixture.
Can garnish with chopped egg, bacon & green onions.
Refrigerate until chilled.
Other variations on this recipe are: adding 1 cup chopped celery, 1/4 cup sweet pickle relish or cut up pickles, 1/4 teaspoon garlic salt.
As you can see there are lots of variations on this salad. Trying something different each time makes it a fun salad and not the same boring taste. I’m just not sure what to add to get my husband to enjoy this delicious salad. He doesn’t know what he’s missing out on!!
